Hello Reader,

It is time to start my St. Patrick's Day beef brisket! I always make my corned beef from scratch. I don't use curing salt, which means you can make it without having to buy anything special. It is also nitrate-free.

It does take 7 to 10 days to fully cure so plan accordingly.
